Ingredients
  • 1 ½cups whole rolled oats
  • ½cup desiccated coconut
  • ½cup flaked or chopped almonds
  • 2 ½tbsp olive oil
  • 2tbsp honey
  • 1tsp vanilla
  • 1tbsp water
Instructions
  1. Preheat the oven to 150C.
  2. In a food processor, combine the oats, coconut, almonds, oil, honey and vanilla for 30 seconds.
  3. Add the water and process again for 15 seconds.
  4. Using wet hands,
take a small amount of dough and shape into a ball. The recipe should make around 20 small cookies.
  5. Place the cookies onto a baking sheet lined with baking paper and flatten down slightly, ensuring there is enough room for spreading.
  6. Bake for 20-30 minutes until golden brown.
  7. Cool on a wire rack before sharing. These will keep in an airtight container for 5 days, but if they last that long it will be very surprising.
